A recipe for a fun and tasty first course.
To prepare Flora Wholemeal Rice pie, first put a knob of butter and finely chopped onion and shallot in a saucepan, add the peas, wet with two tablespoons of boiling water and cook.
Boil Flora Wholemeal Rice in one liter of lightly salted water for 12 minutes. Drain, toss with a knob of butter and let cool. Combine beaten egg and cheese and mix thoroughly.
Combine some of the peas (about ¼) with the diced mozzarella.
Grease a doughnut-shaped mold and fill it by alternating layers of rice and pea and mozzarella mixture, ending with the rice. Sprinkle the surface with grated cheese and lay small knobs of butter on top. Grate in a 170° oven for 15 minutes.
To make the pea cream that will serve as the base of the pie, blend the remaining peas, season with salt and pepper.
At this point, turn the mold upsidedown into a serving dish after laying the pea cream on top. Sprinkle with black pepper to taste.
