A delicate tasting recipe that combines northern and southern flavors.
To prepare citrus flavored salmon with wholemeal rice, place a pot of salted water on the stove and bring to the boil. As soon as it boils, pour in Flora Wholemeal Rice and let it cook for 12 minutes.
While the rice is cooking, prepare the salmon. In a nonstick pan sauté the spring onion a few minutes; when it starts to soften, add the salmon. Halfway through cooking, add the zest of the orange, grated lemon and a tablespoon of honey. Finish cooking the fish by adding the squeezed citrus juice.
Plate the salmon served with Flora Wholemeal rice seasoned with a drizzle of extra virgin olive oil, salt, pepper, ginger and fresh oregano leaves.
