Rice stuffed eggplant rolls
Ingredients for 3/4 people

400 g Flora Whole Meal Rice
4 eggplants
1 white onion
200 g cherry tomatoes
Mint, oil, salt and pink peppercorns to taste.

PREPARATION

With this recipe we present you a tasty but very easy dish to cook.

To prepare the eggplant rolls stuffed with wholemeal rice and mint, slice frist the eggplant and grill it.

Meanwhile, cook Flora Wholemeal rice for 12 minutes, drain it and let it cool.

Cut the cherry tomatoes into very small cubes and add them to the rice along with a few mint leaves and a sprinkling of pink pepper.

Lay a generous tablespoon of rice on each grilled eggplant slice. Roll up the eggplant and close it with a toothpick. Decorate the dish with cherry tomatoes, mint leaves and pink peppercornss.
