Zucchini pesto rice with dried tomatoes
Ingredients for 4 people

320 g Flora Wholemeal rice
200 g zucchini
125 g evo oil
30 g pine nuts
30 g grated cheese
30 g basil
12 dried cherry tomatoes
salt to taste
pepper to taste

PREPARATION

Start by making the pesto: grate the zucchini and place in the blender along with the pine nuts, grated cheese, basil, salt and pepper. Add the oil and blend until smooth. Meanwhile, cook the rice until al dente, drain well and mix with the pesto. Place it in small single-portion glasses and complete the serving with dried cherry tomatoes and fresh basil leaves.
