Pistachio and peppers rice patties
Ingredients for 3/4 people

320 g Flora Whole Meal Rice
6 tablespoons shelled pistachios
3 yellow, green and red peppers
2 tablespoons soy cream
1 egg
Breadcrumbs to taste
Dried chives
White sesame seeds
Black sesame seeds
Salt, thyme to taste
Extra virgin olive oil

PREPARATION

A simple recipe for a colorful, light and great-tasting dish.

To prepare the rice and pistachio patties, bring a pot of water to a boil, add salt, pour in the Flora Whole meal rice and cook for 12 minutes.

Meanwhile, wash and dice the peppers and sauté them in a pan with a drizzle of extra virgin olive oil for about 15 to 20 minutes, stirring occasionally. Once cooked, season them with salt to taste.

As soon as Flora Whole meal rice is ready, drain and place it in a large bowl. Let it cool and add the egg and some breadcrumbs if the mixture remains soft. Adjust salt if necessary and mix well. In another bowl pour the breadcrumbs, chives, and black and white sesame seeds and mix well. Form balls with the rice mixture by tossing them in the flavored breadcrumbs.

Heat two fingers of EVO oil in a nonstick frying pan. Once hot, dip the meatballs in it and cook them for a few minutes, turning them on all sides. Put them on a plate and serve.
