To prepare the shot glasses of rice with caprese and anchovies, first cook the Flora wholemeal rice in salted water. Meanwhile, dice the mozzarella and cherry tomatoes. Once cooked, drain the rice and let it rest for a few moments. Next, place it in a large bowl and then add the mozzarella cubes and cherry tomatoes. Season with a pinch of salt and a drizzle of extra virgin olive oil and mix everything together. Then place the rice in the shot glasses, add an anchovy, season with a bit of fresh basil and season with a pinch of pepper.
