Rice patties with red radicchio
Ingredients for 4 people (about 20 patties):

130 g Flora Il Classico Rice
1 knob of butter
30 g grated cheese
Salt and pepper to taste
60 g breadcrumbs
2 medium eggs
Red radicchio to taste.

PREPARATION

A tasty appetizer easy to prepare.

It only takes a few steps to prepare it: boil the rice in salted boiling water. Once ready, add the butter and grated cheese and mix well to combine. Adjust salt if necessary. Then pour Flora Il Classico rice into a wide, flat tray, level, cover with foil, and let it rest for 1 hour. At this point the rice is ready to be shaped: using a spoon, take some of the rice and form small balls about 3cm in diameter. Then dip the patties first in egg and then in breadcrumbs and place them on a baking tray lined with baking paper, drizzling them with oil. Let bake at 200° until golden brown. Plate and serve with fresh red radicchio.
