Green rice crown with cherry tomatoes and mozzarella cheese
Ingredients for 3/4 people

500 g Flora Il Classico rice
100 g fresh spinach
500 g of cherry tomatoes
250 g mozzarella cheese
Fresh basil to taste
Extra-virgin olive oil
Herbs to taste
Salt and pepper to taste

PREPARATION

A recipe inspired by the colors of spring.

To prepare our green crown cook Flora Il Classico rice in plenty of salted water. Drain it and let it cool.
Blanch the spinach and mix it with the rice, season them with salt and pepper to taste. Transfer the mixture to a doughnut mold by pressing it well with a spoon and leave it in the refrigerator for at least 20 minutes.
Cut the cherry tomatoes into quarters, put them into a bowl and season with salt, pepper and extra virgin olive oil. Then add the cherry mozzarellas.
At this point, remove the rice crown from the refrigerator and unmold it onto a serving plate, arrange the tomatos and mozzarella salad in the center and garnish with a few basil leaves and herbs.
