Rice with eggplant chips
Ingredients for 3/4 people

320 g Flora Whole Meal Rice
3 eggplants
100 g flour
Salt and basil to taste
Pumpkin seeds
For frying: extra virgin olive oil or peanut seed oil

PREPARATION

Here a recipe that combines simple ingredients to make an impressive dish.

To prepare rice with eggplant chips and basil put Flora Wholemeal rice to cook for 12 minutes in plenty of salted water. Drain and let it cool.

Meanwhile, wash the eggplants and cut it into very thin slices.

Pour plenty of oil into a frying pan. When hot, fry the previously floured eggplant chips. As soon as the eggplant chips are golden brown, remove them from the oil with the help of a skimmer and place them on a plate lined with paper towels. Salt them to taste.

At this point, add the rice to the chips and basil, mix gently and serve. Garnish with more basil leaves and pumpkin seeds.
