To prepare rice with red cabbage and fontina cheese, cut the cabbage into thin strips, after washing it thoroughly, and cook it in a large pan along with extra virgin olive oil, chopped onion, salt and pepper. Let it cook with the lid on so that it doesn’t dry out too much. Transfer the cooked red cabbage to a saucepan, pour in Flora Il Classico rice and toast it over a high heat for a few minutes. Then simmer it with a glass of white wine and start cooking the rice by gradually adding the vegetable stock.
