Dried fruits, raisins, pomegranate, mint leaves and rice: a recipe for an out-of-the-ordinary salad. First, bring a pot of water to the boil. Add salt, then pour in the Flora Bell’Insalata Rice. When it is cooked, drain the rice and let it cool by spreading it out on a tray. At this point, adjust the salt, add a drizzle of extra virgin olive oil, the dried fruit and raisins and mix. Cover the bowl with foil and leave it in the refrigerator so that it cools and the flavors blend completely. Before serving, add the pine nuts, which you have toasted and lightly browned in a hot pan, the pomegranate seeds and the mint leaves. Garnish by adding the special touch of a sprinkle of paprika.
