Three-grain with mushrooms speck and radicchio is a tasty autumn recipe made with: rice, spelt and barley with mushrooms, radicchio and speck. An easy recipe, perfect to prepare beforehand.
Wash the radicchio and cut it into small pieces.
Clean the mushrooms and slice them thinly.
Pour a drizzle of oil into a pan and sauté the chopped onion in it. Then add the radicchio and cook, for a few minutes, until it “wilts.”
Add the mushrooms, season with salt and pepper. Cook for a few minutes, until the mushrooms are soft.
When the seasoning is cooked, turn it off.
In a small frying pan, brown the chopped speck until crispy.
Boil the THREE-GRAIN rice of Riso FLORA for 12 minutes. Drain and season with the prepared mushroom dressing and a drizzle of raw extra virgin olive oil. Decorate each serving with a little of the crispy speck.
Serve this dish hot or cold.
